2018 Green Valley Rosé of Pinot Noir
Our 2018 Green Valley Rosé of Pinot Noir was produced via the saignée method during day two of the cold soak of an early Pinot Noir pick at Ektimo Vineyard.
It was fermented a very small amount of this juice slowly in tank at 58F with viable yeasts brought over from the wild ferment of our Pinot Noir. The secondary, malolactic fermentation halted naturally during the cool January of 2019 and was not restarted.
The result is a very electric, food-friendly wine, a perfect companion to a warm day or night.

Crush: saigneé from day two of Pinot cold maceration
Ferment: “wild” ferment, neutral oak barrel conditioning with battonage, partial MLF
Elevage: 4 months in neutral oak
Aromas: Strawberries, flint
Palate: Lively stone fruits, plenty of zing!
